Healthy (Air-Fryer) Cuban Papa Reyenas (Stuffed Potatoes)

Healthy Papa Reyenas (Cuban-stuffed potatoes) recipe for air fryer!

For the (Filling) meat
I pound extra lean organic ground beef
1/4 cup onion finely chopped
1/2 large jalapeño
Dash of garlic powder
1/2 teaspoon black pepper
Pinch Crushed red pepper 

In a skillet brown ground beef- using a masher- finely mash. Add all the ingredients and continue cooking until beef is thoroughly cooked. Strain any fat. Set aside 

Potatoes 

2-3 large baking potatoes

Salt and pepper to taste after they are cooked


Peel and cut potatoes into small cubes. Place in pot of hot water. Cook on medium high heat. Bring to a boil- reduce heat and continue cooking until potatoes are cook thoroughly
Drain. Mash- add salt and pepper to taste! Set aside.

Coating
3/4 cup plain panko crumbs Japanese style bread crumbs
2 cups brown rice cereal
Place cereal in a freezer zip lock bag. Using a rolling pin roll over secured bag until cereal is finely crushed. Place rice cereal in a large platter - add panko and combine. Set aside.

 

Egg batter
2 eggs
Crack into a bowl and beat.

 

Assembling Potatoes
Taking your potatoes (make sure they are cool enough to handle) make a half of a baseball shape in the palm of your hand. - add a spoonful of the cooked meat to your half shaped baseball. Take additional mashed potatoes and cover meat (making a baseball size ball). No meat should be visible. Be sure not to make the top large. Take the potato ball and gently roll in egg bowl then place in cereal & panko platter and gently roll until it’s completely coated. Set aside. Continue until you’ve used up all the potato mixture.
Taking your air fryer- coat it well (bottom and sides) with coconut spray.

 

 

Gently place potato balls in fryer- then spray potatoes with coconut spray and cook according to your fryers instructions (bake 370 degrees) for about 7-8 minutes then turn -(fryers vary... keep a close eye to ensure 350 /15-18 minutes is a lightly brown color). Ours fits 5 potatoes balls at a time (our batch makes 9-10) depending on size you makes yours. we served them with drunken black beans and a side salad. D'LISH!
