Calabasitas- this dish is ridiculous! Sauté diced onions (about 1 tablespoon each) jalapeños and tomatoes in a tablespoon of olive oil-cook about2 minutes . Chop a large or two small zucchini(s) add it to the sautéd trio- mix about 1-minute. Add 1/2 cup frozen corn kernels . Add milk (I use 2%) about 3/4 cup and two string cheese chopped or mozzarella cheese -cook until cheese melts. Add black pepper to taste- enjoy!
